I'll be having university trials around the 17th /18th of September. So I was wondering a couple of things. Do I want to peak at the trials? Is 3 months / 12 weeks enough time to get super fit? How long is closed/ off season meant to be?

Well it is obvious you want to peak at your trials. Preforming at your best will increases the chances of you making the squad. Its not rocket science...
